If you follow me on Instagram, you probably know that I’m a big big fan of quick and easy weeknight meals for one.

Easy

Especially because I’m usually cooking for just myself, I love experimenting with meals that require less than 30 minutes and as few ingredients as possible.

One Pot Meals

All the recipes below are ones I make pretty much on repeat. Since I’m constantly sharing them on Instagram only, I’ve received tons of requests for recipes. And here they are, all in one place!

My undying love of Trader Joes makes its way into most of these recipes, but many items can be substituted with items found at your grocery store.

I’m always willing to spend a little bit more money on time-saving items like prepared fresh veggies (pre-washed and cut in the produce section), frozen cauliflower rice, frozen mashed sweet potatoes, frozen cauliflower crust pizza, frozen stir fry mixes, pre-cooked pot roast, etc etc.

These weeknight meals for one are great because they don’t require any prep at all. Many of them make leftovers that are great to take for lunches all week

The method for these is SO easy. I just place my protein and vegetables together on one pan. Any protein works – mix it up!

Healthy Meals For One Recipes

My favorites are chicken breast, pork chops, pork tenderloin and chicken sausage because they require a similar cooking time as the vegetables.

My trick for vegetables is to try to choose vegetables with similar cooking times. For example, zucchini cooks more quickly than brussels sprouts, so I would cook those on separate pans.

If you’re cooking harder vegetables like squash or potatoes, cut them in very small pieces so they cook in a similar time as other vegetables like brussels sprouts, carrots or broccoli.

Costco sells microwavable pot roast with gravy that’s actually SO good! I freeze mine and bust it out during busy weeks. They also sell shredded pulled pork that’s Whole 30 compliant!

I’ve recently become obsessed with Trader Joes cauliflower pizza. Buy the one already with cheese in the frozen section, not the one that’s just the crust!

Dinner

Don’t cook it according to packaging directions! Thaw the gnocchi in the microwave first. Then, cook it in a pan with coconut oil or avocado oil on both sides until brown and crispy.

One of my favorite salad combinations is reminiscent of my favorite food: PIZZA. It’s spinach, green pepper, red pepper, mushrooms, red onion and pepperoni.

Mix the turkey back in, add more soy sauce and sriracha to taste. Top with a fried egg if you’re feeling fancy.
