With the 4th of July just a couple of days of away, I’ve beenspending some time thinking about what to make for the big day. To me thatusually means potato salad, burgers, hot dogs, lemonade, and some kind of red, white, and blue dessert.

Dessert is usually a lot of fun to make when celebrating the 4th, and I’ll probably make these Mini Fruit Pizzas again like I did last year. They were a big hit and I know I’ll probably devour more than my fair share this time around, too!

Best Salad Recipes

When there’s lots of yummy desserts and other heavydishes to chow down on at a barbecue, sometimes I like to prepare a healthier alternative. It’s nice to have a fresh side dish to balance everything out, and this Greek Cucumber Salad definitely fits the bill!

This salad is so easy to throw together. The hardest part is chopping the veggies, and that really only takes about five minutes. Add in some spices, lemon juice, olive oil, and feta, and you are ready to go.

Easy Summer Salad Recipes For Hot Days

You can definitely make this in a quick pinch for any barbecue or get-together this summer, but if you let it marinate for a couple of hours, the flavors will develop even more.

I made ours with black olives because my hubby and son love them, but if it were just for me, I’d leave them out! I’m kinda anti-olives. If you prefer a different kind of olive, you can definitely use those instead, too.

So what kind of side dishes do you have planned for your 4th of July celebration? Share your ideas with us below! We’d love to hear them.

Mediterranean Potato Salad {no Mayo!}

Grilled steaks, burgers, and hot dogs may be the usual stars of your summer celebrations and backyard cookouts, but let this be your reminder not to skimp out on the sides! After all, you can't have the perfect summer plate without some colorful seasonal side dishes to round it out. So, next time you fire up your grill or pull out your favorite picnic basket, make sure to whip up a few of these delicious summer side dishes, including pasta salads, potato salads, and grilled veggies galore!

With summer sides, there’s always an abundance of fresh seasonal produce to choose from. Try sweet corn recipes, juicy tomato recipes, zucchini recipes, and dishes using garden-fresh basil. Many of these sides, like the simple grilled eggplant and avocado salad, will add a healthy element to your summer dinner menu. Or, you can go the comfort food route and pick a few BBQ sides and picnic sides, like cornbread, coleslaw, and baked beans. Either way, there are tons of options to choose from, and you can even mix-and-match to make the summer meal that's right for you. Then, serve them up with grilled chicken, pork, fish, or even as a side dish for steak. Just be sure to save some room for the summer desserts and refreshing cocktails, of course!

Frilly bow tie pasta not only makes this salad super cute, but it provides plenty of pockets and ridges for the refreshing dressing to cling to. This picnic-perfect pasta salad is as colorful as it is flavorful, with loads of peas, ham, red bell pepper, green onions, and cheddar cheese.

This grilled eggplant is a little lighter than the fried variety but just as delicious! This recipe calls for salting the eggplant before grilling it to keep it tender on the inside and crisp on the outside.

Creamy macaroni salad is paired with shredded carrot, crunchy celery, and onion in this easy recipe from the Aloha State. Its sweet and tangy flavor pairs perfectly with your favorite hearty BBQ mains, like ribs, pork chops, and even hot dogs!

We can all agree that potatoes are perfect on their own, but serving them up with creamy ranch takes the starch to another level! The crispy potatoes are also tossed in herby ranch seasoning mix for even more tangy ranch goodness.
