Summer Pavilion Vegetarian Menu

(Updated to show Michelin Star Dinner Menu at end of post) Today, we show you our lunch at the wonderfully redecorated new Summer Pavilion Chinese restaurant at Ritz Carlton Singapore. Ritz Carlton Hotel Singapore has a very plain exterior. Some may even say it looks an office block. But the interiors are a different story. Massive works of art and gigantic glass windows let in tons of light to illuminate the indoor spaces. Their restaurants, Summer Pavilion and the Colony (formerly known as the Greenhouse) re-opened around the end of last year after months of major renovations.

The entrance to the Summer Pavilion Chinese restaurant is a grand one. Walk up these black marble steps, turn left to the private dining rooms or turn right, go past the nice display cabinets showing off some tea and tea making apparatus and enter this bright and beautiful restaurant.

New

The decor of Summer Pavilion is one of effortless elegance. It looked so good without giant chandeliers or other opulent ornaments. Just good quality hardware and an excellent layout which provided different seating options and tables that are not too close to each other. We never thought that big clumps of feather dusters can be so beautiful. Everything counts in large amounts, I guess.

We munched on some thinly sliced yam crisps while studying the menu and admiring the attractive tableware.  Even the chili saucers were beautiful.

We ordered an assortment of dim sum dishes – prawn dumplings (har kow) ($2 per piece), sea perch dumplings ($3 pp), pan-fried yam and pumpkin ($1.80 pp), bacon puffs ($2 pp).

To cut the story short, all the dim sum items were good. They are among the best in Singapore. The sea perch dumplings were tiny and quite pricey at $3 per piece.

The bacon puffs and the fried yam and pumpkin deserve more special attention as they were not the run of the mill dim sum items. The bacon puffs contained radish and other ingredients, including some traces of citrusy zest (probably yuzu). The deep-fried pastry skin had some bacon taste.  An unusual and tasty combination.

The pan-fried shredded yam and pumpkin looked like attractive pieces of cake. We only associate the combined tastes of yam and pumpkin with the Teochew dessert oh-nee, but this fried version also successfully blended the earthy yam taste with the sweet richness of pumpkin.

Small plate, tapas-style dining is the rage these days. We are glad to see that Summer Pavilion has introduced some small plates into their menu. This makes dining at a Chinese restaurant so much more interesting for two or three people.  We tried a few items from the small plates menu – seasonal vegetables ($13), honey spare ribs ($10), deep-fried cuttle fish ($10).

The stir fried vegetables were light and simple, providing a good break for the palate in between the other more substantial items.

The deep-fried spare ribs with honey sauce was superb. The ribs had been cut into small cubes, each of which had a nice balance of bone and meat.

The deep-fried cuttle fish with pepper salt will put the regular calamari dishes in Western restaurants to shame. This is the perfect finger food to go with pre-dinner aperitifs.

Finally, we only had space for one item from the ala carte menu and so we selected something that was familiar yet unusual. Crispy chicken with Thai sauce. We had selected a small portion but it was probably enough for a party of six.  The sweet and sour sauce had subtle Thai flavours. This was our final dish. We had no space for dessert. Overall, a wonderful lunch in a delightful space with great service. Chinese tea costs $7 per head which is on the high side for a Chinese restaurant, but we had no complaints as the Jasmine tea served was a notch better than those served elsewhere.

We had called ahead and were fortunate to secure the only remaining table. It was worth the effort as we discovered that a refreshed dim sum menu had been introduced at this one Michelin star Chinese restaurant in Singapore.

Best Chinese Restaurants In Singapore: Our Top Picks

Here are pictures of the new Summer Pavilion dim sum menu as well as their weekend chef’s recommendations and some pages from the ala carte menu. We selected a mix of items from all three lists.

We like a crisp white wine to go with our dim sum. Our wine of the day was a 2013 Domaine de Chevalier blanc. The dry white Bordeaux was a fresh and zesty wine, perfect to have with the mostly light dim sum items, especially on a 35°C Singapore afternoon. The yam crisps were nice to munch on while waiting for the real food to arrive.

Lunch

The highlight of the steamed dim sum items were the vegetarian crystal dumplings with truffle ($3 / piece). We are usually cautious about efforts to add truffles to all kinds of food. In this instance, we thought it was a successful effort. The mild truffle flavour complemented the taste of mushroom in the dumplings. These were very delicious.

The other steamed items that we had were the poached prawn dumplings ($5.40) and the steamed rice rolls with scallop ($10). These were not as novel as the crystal dumpling, but still very finely executed dim sum items.

We had two fried dim sum items – chives dumpling ($5.40) and crabmeat dumplings ($6). Both were good. The crabmeat ones in particular contained generous amounts of the crustacean. We thought that the new dim sum items were very interesting. It was refreshing to be able to avoid having the usual dim sum staples like har kao and dim sum. The prices were quite reasonable, even without taking into account Summer Pavilion’s Michelin Star Chinese restaurant status. The dim sum portions are however quite small, so this may not be the most economical place to have dim sum lunch with hungry teenage children.

We had one item from the chef’s weekend recommendations list, deep-fried spare ribs in honey sauce ($10). This was a tapas-sized portion. The pork was mainly boneless and well prepared with no ‘porky’ flavour.

The best dish of the day, or perhaps the best dish we have eaten in recent months, was the poached rice with lobster ($20). This is one of the chef’s recommendations in the ala carte menu. Although the broth appears to be light, it was packed with concentrated seafood flavour, almost like a lobster bisque without the cream. When stirred, it became like a bowl of lobster porridge, Teochew style with the rice grains still intact. The lobster pieces were fresh and perfectly cooked. It is probably dishes like this that earned the restaurant its Michelin star Chinese restaurant credentials.

Weekend

We ended our meal with a chilled black glutinous rice with a coconut ice-cream. A Chinese restaurant version of pulut hitam. Unusual but nice. Some complimentary petit fours added more sweetness to the end of our meal at the Chinese restaurant at the Ritz Carlton.

Handling Special Diet Restrictions At Large Events

Ritz Carlton’s Summer Pavilion Singapore has a one Michelin Star distinction in the 2021 Singapore Michelin Guide. They have retained this status over the last few years. With only a handful of Chinese restaurants in Singapore having the coveted star status, this arguably makes it one of the best Chinese restaurants in Singapore. As described in our previous posts on this restaurant, the ambience is calm and peaceful. Service was top notch as usual on this visit.

There are a few types of lunch and dinner menus at Summer Pavilion Singapore. The Orchid Lunch menu is one of the most affordable. We used to think that the $88++ lunch was quite expensive. But the prices at many other restaurants have steadily crept up. Perhaps we have become numb to the pain – we thought that $88 for a 5 course meal at a one Michelin star restaurant in Singapore sounds reasonable.
