Cold soup is one of my summer obsessions, right up there with salads, cold brew, and everything sweet corn. On a hot summer day, there’s nothing I crave more. Cold soup is hydrating, refreshing, and brimming with peak-season produce. You’ll find 9 of my go-to cold soup recipes below. They include classics like gazpacho and chilled cucumber soup as well as out-of-the-box ideas like cold carrot coconut soup and sweet corn gazpacho. These recipes are ones I look forward to making every summer. I hope you love them as much as I do.

With their sweet, tangy flavor and high water content, tomatoes are prime candidates for blending into cold soup. These recipes are perfect for warm days in mid-late summer, when tomatoes are in top form.
This recipe is a simplified riff on classic Spanish gazpacho. I make it without the traditional bread, yielding a light, flavorful soup that’s totally vegan and gluten-free.
Yellow tomatoes + cilantro + cucumber = a gorgeous green gazpacho! I blend sunflower seeds into this simple soup to give it a smooth, creamy texture.

Don’t worry – this gazpacho isn’t sweet. Instead, it’s deliciously nuanced and balanced, as the watermelon’s sweetness offsets the bite of the red wine vinegar, green onions, and garlic.
Here, I char the tomatoes before I blend them. This quick and easy step adds smoky depth of flavor to this yummy summer soup.
I know, I know – cucumber is a key ingredient in classic gazpacho, and you’ll find it in almost all of the chilled tomato soup recipes above. But in the cold soup recipes in this category, the tomatoes step aside, letting crisp, cool cucumbers become the star of the show.
Corn Soup Recipes For Summer
Charred tomatillos infuse this cool soup with a kick of tangy flavor. Top it off with sliced cherry tomatoes, cucumbers, and fresh corn kernels for crunch.
Chilled soup with…carrots? Cold zucchini soup? You betcha. Though unconventional, these cold soup recipes are delicious and nourishing. Add them to your to-make list ASAP!
Make this recipe after a trip to the farmers market, when you’ve scored a vibrant bunch of local carrots. Their sweet, earthy flavor will contrast beautifully with the rich coconut milk, aromatic lemongrass, and spicy curry paste in this soup.
Summer Creamy Vegetable Soup
Sweet corn, yellow tomatoes, and yellow bell peppers combine to create this soup’s sunny color. Thanks to the corn and a splash of sherry vinegar, it has a lovely sweet and tangy flavor.
After you’ve baked your umpteenth loaf of zucchini bread, change things up and make this zucchini soup! I always top my bowl with a few homemade croutons to add heft and crunch to this light, creamy dish.

When it's summer's high season, and the garden is overflowing with more vegetables than one can reasonably consume, a great way to make use of the bounty is to make minestrone soup.
Best Chicken Gnocchi Soup Recipe
A few zucchini here, a couple of chopped tomatoes there, some beans, grab the lonely leek that's sitting in the fridge, add some chicken stock, a handful of pasta, and in a few minutes, you have summer in a soup.
You can use vegetable or chicken stock. The soup can be thin and focused on the broth, or it can be thick and stew-like.
On a recent trip to Italy, visiting my sweetheart's Italian relatives, we were served minestrone twice, both times with apologies (I'm sorry we don't have anything special for you, only minestrone), and both times the broth was exquisite, the vegetables perfectly fresh and tender.
Outrageously Delicious Vegetable Soup
This summer minestrone recipe captures the freshness of the soups we had in Italy. It's probably a bit thicker, we are serving up more veggies for the broth, but the taste is spot on.
Consider the recipe a guideline, and feel free to play with the amounts or types of vegetables. Make it your improvisation! (And let us know how it goes in the comments.)
Do you keep Parmesan rinds in the freezer? If not, it's time to get in the habit. They're fantastic for flavoring sauces and soups, especially ones with tomato, like this one. Simply throw a rind (or two) into the pot and fish it out when done cooking.
Easy Summer Vegetable Soup
Whether you're refrigerating or freezing this soup, the pasta will expand and become chewy as it continues to soak up liquid. Consider storing it pasta-less and adding cooked pasta to individual servings as needed.

1. Fennel Walnut Soup with Leeks & Turmeric. This golden soup is super buttery because of the walnuts that we blend right into the soup! This also makes the simple purée a touch more satiating.

5. Garlic Pepper Soba with Chili-Roasted Tofu. This is a great, simple soup recipe, but this post also features my vegetable stock making method. Good soup needs good stock ;)
